Homemade Gingerbread Cake

Last night, I did something different with my Wednesday night class of girls. I decided it would be fun to do Christmas in July. Growing up, my mom would pull out the Christmas dishes in the month of July so we could get some extra mileage out of them. It was always a lot of fun and kind of a silly. My class really loved the idea of bringing Christmas to July and so I set off to plan a Christmasy evening.

The night started off with Christmas Games. We did a Christmas Word Search, A Guess that Carol Game, Christmas Carol Word Scramble and Fill in the 12 Days of Christmas. I gave out prizes as the night went on for whoever got the most answers correctly. We finished the Christmas games with the Left/Right Game. I handed out the last of the prizes and as I read a story, the girls had to pass the presents to the left or the right when they heard the words left or right. It was a lot of fun and in the end everyone walked away with a prize, so it was like Christmas!

As much as I wanted to do a Christmas lesson, I had to continue on with our current unit so I didn’t get behind. There are only so many Wednesday nights left with my class and each lesson is carefully planned so we end our unit in time for the school year and the class transition. So, from Christmas, we popped over to our Self-Esteem lesson.

After the lesson time, we did a Christmas craft which involved decorating a Christmas ornament while listening to Christmas music. I made gingerbread cake for snack from scratch. This was my first time not using the packaged mix and it turned out surprisingly good! I’m never sure when it comes to making cake from scratch if the texture will be just right or the flavoring! I jazzed up the cake by adding whipped cream on top. For a touch of holiday color, I used green and red crystals.

The night was a big hit and the girls told me it really felt like Christmas. One girl mentioned that she was going to ask her parent’s for a present since it seemed so real. I’m not sure how well that was received, but I have to agree, I felt in the holiday spirit. The games and the flavors of the holidays made me wish that it was really right around the corner. I’ll just have to patiently wait now until the real holiday! It was fun to get a jump start on celebrating!

Life After Hawaii July 2, 2013

Strawberry season is here!

Strawberry season is here!

Well, all good things come to an end and this will be the first blog after all the Hawaiian updates and stories. I hope you all enjoyed your sneak peek into our vacation. There was just too much good share in one, singular blog. Thanks for following the Maui highlights day by day. I honestly thought the daily posts might annoy you all, but I had some good readership numbers and I heard from many friends and family members about how much loved the stories and wanted to hear more. It always makes my heart happy to know that people are enjoying what they read here. Maybe I should start traveling for a living and writing about my adventures? If only!

Now it’s back to the real world. Seems like Jeremy and I landed in Washington and hit the ground running. The first full day home, Jeremy was back to church and I was at a dance recital for a wonderful student that I mentor. We’ve had our first big strawberry harvest come through and we’re up to our ears in strawberries! I made strawberry shortcake to celebrate and it was delicious! My first night back at my Wednesday night class, I made strawberry ice cream sandwiches from a recipe I saw in Food Network Magazine. You take sugar cookies and put strawberry jam on them and then put a scoop of strawberry ice cream in the middle! Yum! I’ve also used the strawberries to make a smoothie. I think my hubby will soon be canning and making strawberry jam! Good times!

Belle - A very ugly plant that bloomed into a beautiful flower this weekend!

Belle – A very ugly plant that bloomed into a beautiful flower this weekend!

Last week, we had our annual trip the Oregon Zoo with the kiddos at Bethel. It was a fun day, but very warm! It seems that we brought the hot and humid weather back with us from Hawaii. I got a little sunburned, but it was really great to be out and about. I was concerned about walking all over the zoo with being pregnant, but it didn’t bother me at all. I was super tired that night, but for the day, I was able to keep up with the kids and I was happy for that.

Friday night, we had family over for dinner and had a good time with them. Jeremy barbequed up some yummy ribs and we had grilled corn and baked beans. We played a couple of games and ended the night with s’mores by the fire. It was the perfect summer day! I’m loving the summer time food and being able to share it with family.

Saturday, we headed up to Mt. Rainier National Park for my grandma’s 80th birthday party! It was great to head up to the mountain because it was the perfect temperature up there. We’ve been in a heat wave, so it was nice to sit in the shade and enjoy the mountain air! It was great to see family members who I hadn’t seen in many months. The hot topic right now are the babies since both my cousin and I are expecting. We’re due about three weeks apart so it was fun to talk with her about where they are at. The found out while we were in Hawaii that they are having a boy and it seems they don’t have any names either. I can relate to that!

Sunday, we started to decorate for VBA (Vacation Bible Adventure) after church! It’s hard to believe that in just a few weeks our Family VBA will here! I spent the morning making many photocopies in preparation for the big week! The deadline to register is coming up on July 10th and our deadline to register for Kid’s Camp is coming up this weekend. Now that we’re into July it seems like the summer is just flying by! So much good stuff still ahead. I can’t wait to share it with you!

Now and Then June 8, 2013

Tonight was graduation at my alma mater, W.F. West High School. 9 years ago I walked that same pathway to graduation. Today I got to cheer on girls that I fell in love with as 4th graders! The class of 2013 is really responsible for me diving into children’s ministry and totally loving it! It’s been an honor and a privilege to remain friends with these students. They are an amazing group of ladies! I know that God has big things in store for their future. Up until this point, I’ve been talking about how they are graduating – now they have! These girls are no longer in high school! How crazy is that! It feels like it all flashed by in the blink of an eye! I know I already posted some pictures from the good ol’ days a few blogs ago (click here to check it out), but I couldn’t help myself, I had to add more. Here is a look at us a few years ago and a look at this week! We’ve come so far! I can’t wait to see how far we’ll all continue to go! My prayers is that maybe 8 plus years from now I’ll have another set of photos with these ladies. I’m hoping that no matter where their journey takes them, they continue to keep me around! I’m kind of fond of them!

Books, Appointments, Lunch Dates and More! June 7, 2013

I haven’t had much to blog about lately. Life has been full as usual, but it seemed like none of my activities individually were enough to devote an entire blog post to. Sooo… now that the week is winding down, I thought I would update you on what has been going on in my world. There is lots to share now that I’ve stored up my stories!

On Sunday, I finished an awesome book by Jodi Detrick called The Jesus-Hearted Woman. Jodi, who used to be our senior pastor’s wife years ago before they moved on to different ministry positions, shares what she’s learned about endearing and enduring leadership throughout the years. Everything I read was spot on and it really encouraged me to hear these words from someone who has paved the way before me. It also was fun to see the names of many ladies I know sprinkled throughout Jodi’s stories! It’s like knowing famous people! After finishing this great book, I decided to give my brain a break. It’s been months since I had read a novel and I needed some fluffy reading. I’ve now been devouring novels like cake this week! It’s been great! I got three new books in the mail this week which I was supposed to save for the plane and our Hawaii trip, but I’m already done with one and a half them! My current read is Interrupted by Jen Hatmaker. Still to read is Prototype by Jonathan Martin, who is my favorite podcast pastor. I can’t wait!

Baby Scott @ 21 weeks, 3 days!

Baby Scott @ 21 weeks, 3 days!

Monday was one of those days that turned out differently than I expected. I had lunch with a dear friend from the office and then Jeremy and I unexpectedly headed up to Seattle Children’s Hospital to visit a student. His aunt (and caretaker) is a good friend of ours so we waited with her while her nephew was in surgery. I hadn’t planned to spend the day in Seattle at a hospital, but it was worth it! I love supporting the families in our church. We gave Josh a Lego set that he was excited to get home and play with.  I’m glad we were able to pray with them and provide a little joy during a rough time.

Tuesday was our anatomy ultrasound. We got an in-depth look at our little guy! It was great to know that everything looked good and checked out just fine. We were also reassured that we are indeed having a boy! Now if I buy something (which I still haven’t done yet), I can take the tags off! Hurray! It was great to see that our little boy is healthy and still very active! Tuesday evening, Jeremy grilled us some tasty burgers and with the sunshine and warm weather it really started to feel like summer is here! I should note that the official start of summer for me isn’t Memorial Day Weekend, but June 1st. I’m not sure why, but once it’s June –  it’s summer! That’s just how I see things!

Wednesday, I made molasses cookies for my girls class and spent a lot of time reading. I also took a nap! Usually Wednesday is my big clean the house day, but I put that off so I could deep clean later. Our big trip to Hawaii is coming up soon, so I’m saving all my cleaning efforts for a little closer to the trip. I love coming home to a clean house after vacation.

S'more Season Begins!

S’more Season Begins!

Yesterday, I had a lunch with another co-worker. She will soon be moving out of state so I was happy when she asked to get together before she left. I can not tell you how sad I am that she is leaving. She has been a good friend to me and I know that we’ll remain friends even though there will be distance between us. I can’t say that I am happy to see her go, but I am excited for her future and what God has in store for her. Once I got home from work, I did a few things around the house. I took a nap and finished a book! Jeremy and I went for a walk later that evening and then we had the first fire of the season in our backyard! Which of course was accompanied by yummy s’mores! Tuesday felt like summer was here and Thursday confirmed it!

Now that is Friday, I’m looking forward to a bit of a down day. I’ve been working on laundry and formulating thoughts on what I would like to pack for Hawaii. Tomorrow is W.F. West’s graduation and I have many students that I will go to support and cheer on as they receive their diplomas! I haven’t been to a WFW graduation since my own in 2004 so it will be interesting to head back to my high school and sit in those same bleachers that I spent so much time in almost a decade ago. Crazy! It seems like just yesterday that was me!

And that’s all for now, folks!

Sleepover and Graduation June 2, 2013

Game Time

Game Time

This weekend was a BIG weekend for me! Lots of activity! My class sleepover was Friday night through Saturday morning. It went well! I was amazed at how competitive this group is. Every game we played with very intense and loud as a result! The girls had a good time and the whole event went well. I’m always so blessed by the opportunity to invite my class over to my house. I want them to know that I’m not just their teacher on Wednesday night, but that I’m a friend and someone that cares about them all the time. I want them to know that they have access to my life beyond our classroom time. At this point in the year, I’m super attached to my student and as the end of school approaches, it means that many will be moving up and out of my classroom soon. I’m making the most of the moments I have with these girls, because as I’m watching the 1st class I taught graduation from high school, I am all too aware that my time with them is brief. Soon they’ll be middle schoolers then high schoolers and then adults off at college or chasing whatever dream God lays on their heart. It goes faster than I thought!

Celebrating Jessica's Graduation!

Celebrating Jessica’s Graduation!

Speaking of growing up fast, yesterday afternoon was my first graduation of the season. Jessica has been a mentor girl of mine for years. I met Jessica on Easter weekend when she was in 4th grade. It’s hard to believe that she now a graduated senior and so tall! A lot of my students will out grow me in height but I think Jessica is the winner so far! She’s a beautiful dancer with a heart for the Lord. It’s been a privilege to walk beside her through life’s ups and downs these last few years. At her graduation they asked that we hold all applause until the end of reading the names. It was so hard for me not break out in a loud cheer as she walked across that stage and received her diploma. I’m so proud of her!

The one downside of the weekend was the fact that I got about 4 hours of sleep during the sleepover – or lack of sleepover! When I got home from dropping the students off, I started to clean my house which is a must after having my house taken over by pre-teens. The cleaning took a little longer than I hoped and I didn’t have enough time to take a nap before having to get ready for Jessica’s graduation. So up SeaTac I went on 4 hours of sleep. I hurt I was so tired! Sadly, I had planned to go to dinner with Jessica’s family and group of friends, but I had to cancel on those plans. Instead, I was in bed before 8:00pm last night! I don’t think I’ve gone to sleep that early in a long time! I can tell I needed it! I’m grateful for a quiet morning now. My family wasn’t going to be at church today so I’m skipping the 1st service I usually attend. I’ll come in for Children’s Church at the 2nd service hour. A quiet house and relaxed start to the morning is helping me feel like I’m recovering ground after this crazy weekend. However, I wouldn’t change a thing! I love these girls and I’m am so glad my weekend got to be spent with so many lovely ladies!

Prepping for a Sleepover! May 31, 2013

Filed under: Children's Ministry — Amy Scott @ 11:36 am

It’s that time of year! It’s time for my class sleepover! Every year I do a sleepover at my house for my Wednesday night class of girls. This year I have 10 girls coming as well as some amazing leaders to help me keep things from getting too crazy! This sleepover is one of my favorites because it’s so low-key compared to the big sleepover I do in February at the church. So what does a sleepover at my house look like? We’ll start off with a pizza dinner together – yum! Once we’re done eating, we’ll head outside to play a few yard games. We usually have a croquet tournament if the weather permits. It’s cloudy right now, but it’s supposed to burn off for this evening. I’m really hoping for some croquet tonight!

After the yard games, we’ll head inside for a combo of video games and board games. The Wii is always popular as we play Mario Kart or Wii Party. This year we’ll have the addition of Kinect Sports on the Xbox. These activities are good because they allow the girls to work in teams and continue to build relationships. I have a huge stack of board games that we can play as well. Some favorites from years past would be Disney Scene-It, Apples to Apples Jr. and Last Word. My class this year is really hoping we would play the animal kingdom game. This game is a modified version of Mafia. Jeremy didn’t like the idea of people killing each other but it’s okay for animals, I guess. We make sure the deaths are non-violent and have little or no description. Most of the girls have played Mafia, but to keep things as friendly and G-rated as possible we’ve turned it into an animal game.

As we move inside from the outdoor games, we’ll pause to have dessert. This year we have cake and ice cream to celebrate the many June birthday we have coming up in the next week! Three to be exact! I purchased a cake that has all kinds of fun colors on the inside. We’ll see how it turns out. It looked intriguing. I also have toppings for the ice cream so they can make mini-sundaes to go with their cake! Oh yeah! Nothing like sugaring them up before the next round of games!

Around 10:00pm, we switch modes. I have the girls set-up their sleeping bags and get in their pajamas (if their not already). We’ll start a movie and usually it’s lights out and quiet after 12:30am or so. Most girls make it a challenge to see how late they can stay up, but the majority of them fall asleep during the movie. That is intentional planning on my part! I tell the ones that do make it through the movie to not disturb their sleeping neighbors or me. If they can be quiet enough that the rest of us can sleep then by all means stay up as late you like! Tomorrow I have another big day once the sleepover is over, so I’ll keep on top of the sleeping situation this year. I’ll need some rest before Saturday!

Saturday morning, we have a big waffle breakfast together! I provide strawberries and whip cream to make the waffles extra special! We’ll clean up and pack up after breakfast and head back to the church to meet up with their parents. Once all the girls are off, I usually head home and try to reclaim my house. This year I might just take a quick nap before I have to get ready to head up north for a graduation of one of my mentor girls. We’ll see how that all pans out! If the house has to wait until Sunday, it should be fine since I won’t be home most of Saturday afternoon/evening!

That’s my plan for tonight! I’m super excited and can’t wait to have a blast with my girls! Of course like most things these days, I’m wondering how this sleepover will look next year when I have a kid… It might be harder to turn my house upside for a pack of pre-teen girls. Jeremy and I have talked a little about it. We might do a game night or late night hang out, but minus the sleepover part next year. I don’t know. Just some thoughts and ideas. Since this could be the last sleepover at my house for a few years, I’m planning on making the most of every moment!

The Class of 2013 May 20, 2013

My fridge is filling up with a collection of graduation announcements. It’s hard to believe this season is upon us already. However, more than any other year, this class of 2013 is special to me. My very first children’s class that I taught at Bethel Church are  now this  graduating class of seniors. At the time they were 4th graders about to enter their 5th grade year. I had no clue if I was going to like Children’s Ministry and this class of girls made me fall in LOVE with it! It’s been a blessing to watch them grow into the lovely young ladies they are today. It’s amazing to see how much potential they have and I am excited for how God is going to direct their steps in the future. The biggest blessing for me is that I’ve been allowed to be along for the ride. I have remained close to many in this class and it’s been a joy to watch them grow spiritually over the years. They are an exceptionally class! Apart from my own graduating class of 2004, this class of 2013 might be my favorite class. They have shaped my life in so many ways. I’m blessed to have been a part of their lives for this season. I’m praying God’s blessing on them as they head out into the world and spread their wings to fly. There are some serious world-changers in this bunch. I can’t wait to see what is next for them! Congratulations to the class of 2013! You did it!

Happy May Day! May 1, 2013

May Day flowers from my mom!

May Day flowers from my mom!

It’s hard to believe we find ourselves at May 1st! For some reason I thought that the month of April would go slowly, but it was just the opposite. It’s amazing how time flies! My mom is a sweetheart and last year she brought me flowers for May Day. As I was turning the calendar over today, I wondered if she would do the same thing this year and the answer to that is YES! My hubby showed me the flowers my mom had dropped off at the church over FaceTime this morning. Now they are on my dining room table. I think it’s sweet that my mom celebrates May Day. It’s so homey and Midwest-like in my mind. It’s a kind gesture and one I’m always pleasantly surprised by since May Day doesn’t come up as a holiday in my Outlook calendar.

VBA Desk!

VBA Desk!

Even though May is just beginning, I’ve been in full summer mode for about a month now. Once one big event is done, there is always another to plan at work. Easter Eggstravaganza gave way to securing our summer dates and making our summer packets! These hold all the info for our summer activities and the permission slips to attend the events. Now that all the dates are set in stone, it’s time to start planning some awesome summer events. I spent yesterday morning totally surrounded by VBA materials as I set a game plan for our Family VBA and made lists of what we still needed to order. My hubby had gotten roped into doing PowerPoint for a visiting group, so when He came into the office it was a VBA whirlwind and I was super jazzed to share all the progress I had made. Yes, VBA isn’t until July, but big events don’t happen over night. We have to have to get our ducks in a row before we bring on the team and start resourcing volunteers to be their best. It’s an exciting time as we plan and prepare and dream big for the summer.

It’s the beginning of May and I’m already living in summer mode! Hard to believe, but it’s like this every year. The funny thing is as I was flipping my calendar over this morning, I went too far and I realized that I had June up. I laughed because in a way I wish it was June and my Hawaiian vacation would be closer… but I’m okay with it being May. I plan to make the most of the month and even though I have to think so far in advance, I will try to live in the moment! Happy May Day!

Doughnut Day! April 7, 2013

Filed under: Children's Ministry — Amy Scott @ 3:31 pm

This weekend we celebrated with doughnuts! The kids had been doing an offering challenge through the month of March. The first challenge was to raise 30lbs of change and they blew through that in 3 weeks which lead them to having ice cream sundaes. Because there was still time in the month, we told them if they could reach 50lbs of change then we would give them doughnuts at the beginning of April. Last week they weighed in at 51lbs and so doughnuts were on the docket for this weekend! The kids had a blast and enjoyed their special treat while watching a movie. Normally we don’t watch too many movies in Children’s Church, so it was a double whammy of goodies. I’m really proud of their giving hearts. It was fun to not have this be about a dollar amount. I think that made the challenge even better because they gave over $300 without even being aware of it. We gave them dollar totals every week and every week they were floored by the numbers. It’s surprising how much a “buddy barrel” can hold and it’s amazing how the pennies add up! One week we had over $19 in pennies given. That’s a whole lots of pennies and I counted them all. I will admit that I’m ready for a break when it comes to counting large sums of change. It was a good month and I’m so happy we got to celebrate in such a fun and tasty way. Even better than our goodies is the good that this money will do in the hands of missionaries! It’s exciting all around!

A nice selection!

Easter Eggstravaganza 2013 Recap! April 2, 2013

Filed under: Children's Ministry — Amy Scott @ 9:11 pm

I figured I better write about the big weekend before I completely forget the details. Even now in the tired aftermath, the weekend is starting to blur. First off, let me start by saying it was a BEAUTIFUL day! We couldn’t have asked for better weather considering it was the end of March. I got slightly sunburned, so you know the sun was out and glorious! The weather is a big factor in our attendance and just like years past this day was epic. We added extra parking in our fields so we’re fairly positive we beat last year’s numbers. The guesstimate was that 8,000 people visited the church between both hunts. The number of kids would be around 3,000. It’s not an exact science though… just like we don’t really know that there were 70,000 eggs – could have been plus or minus a couple thousand. No biggie.

The day starts off early for Jeremy and I. We’re the first ones to the church after a stop at McDonald’s. This is the one day a year that I get breakfast there and let me tell you, I love McGriddles. I know that in concept they are gross and terrible for you, but that usually means it’s a food I’ll adore. I enjoyed my special breakfast treat and surprisingly it all settled well on my stomach. I had packed a lunch that ate about 11:30am, but the McGriddle kept me good until then. I guess I could consider that another miracle of the day. It’s nice to be the church before all the crowds and craziness starts. The calm before the storm. I put up a few last minute signs and made sure lights were on and doors unlocked. At 8:00am, we start hiding eggs and by 9:00am we had people arriving. It always amazes me how early people show up for these events. Now that our Easter Eggstravaganza has grown so big, people feel the need to arrive early to get in the lines first and to  get the better parking spots.

The first hunt was the busiest this year. I’m sure it has to do with the weather. Even though last year was nice, the fog was still starting to wear off at our first hunt which made the second one better attended. This year it was the opposite. The day was clear and the sun was out and the people showed up for the first hunt. The second one was the smaller hunt. It’s funny to me how unpredictable things like that can be. I would have sworn the pattern would hold true and we’d have a small first and a big second. Now I’ll be curious to see what happens next year. Is there any pattern? We’ll find out.

As always the petting zoo was a hit! We had a two week old piglet there that was very vocal and very loved. We had calves that were literally days old. We had chicks and ducks and turkeys. We had goats and lambs. It was a good a showing of cute and cuddly barnyard animals. The pony rides as always had a major line. The poor ponies can’t give rides fast enough. If I was one of those ponies, I would twitch if I saw another kids for a while. They were troopers! Applebees had a table where they did face-painting and they gave away free meal coupons to kids. They also brought the Applebee’s Bee and the Easter Bunny (full size costumes). The bee was especially popular. Oh and we can’t forget the four inflatables! We had a giant slide, two obstacle course and a jungle tunnel. Our coffee cart did great in sales and we sold a ton of cotton candy! We have some cotton candy pros now at our church after doing this for two years. They know their stuff! Walking past that booth always smells so good!

It was a big weekend. I was at the church for about 14 hours that day. We ran home for less than 25 minutes to change and show back up for our evening service. We had a ton of kids at both our children’s church hours. It was great to see many visitors and people who came back because of the egg hunts. After two egg hunts, three weekend services and two family dinners, I will admit that Easter weekend almost did me in! I’m still not really recovered. I took a nice long nap yesterday and today was a quiet day in the office to reclaim our space and clear out the remnants of the weekend. It feels good to have the details in place and behind us. This is a great event and truly a fun weekend. I’m not sure I have the energy to keep up with it, but somehow it works out every year – God’s grace!  Below are a few photos from the big day!
